Over the weekend I was watching the Food Network Channel, as I often do in the evening. Honestly, I don’t even remember what was on and it probably had nothing to do with breakfast. But seeing all the delicious foods got me thinking about breakfast. I love breakfast!
As a kid my mom would make breakfast for dinner on a regular basis. So naturally, when I got married I had visions of doing breakfast for dinner with our children. It was at the mention of this, that my husband informs me he doesn’t like breakfast for dinner. What’s more, he likes very few breakfast items. No pancakes, eggs, or waffles. Just bacon, sausage, and biscuits with gravy. Sausage gravy to be specific. So, up until a few nights ago we had never done breakfast for dinner in our nearly 7 years of marriage.
Anyway, as I was watching the food channel I began dreaming up breakfast recipes. That ‘s how I came up with Breakfast Egg Rolls! I love a nice crispy, golden egg roll wrap. So of course, the obvious solution would be to make egg rolls stuffed with scrambled eggs, bacon, and cheese with a good bacon gravy dipping sauce. Then, I thought, if I am making a bacon gravy, I may as well grab a can of Pillsbury Biscuits. Yum!
Breakfast Egg Roll Ingredients:
4 – Egg Roll Wraps
4 – Eggs (Scrambled)
About 1/4 Cup – Shredded Cheddar Cheese
1-2 Slices – Bacon (cooked and crumbled)
Preheat oven to 350 degrees
Place cooked scrambled eggs in the center of the egg roll wraps. Layer with a handful of shredded cheddar cheese and crumbled bacon. Wet the four corners of each wrap and fold into a burrito.
(I placed the biscuits in the oven first for the recommended amount of time. Then, I placed the eggs rolls on a separate greased cookie sheet along side the biscuits during their last five minutes of cook time. This was a mistake for two reasons. First – it took fifteen minutes for the egg rolls to golden. Second – I love a crispy wrap. Baking them does not give the desired affect. Next time I will fry them in olive oil. It will only take a few minutes and give it the texture I like.)
Overall, I loved the breakfast egg rolls, but I definitely recommend frying them in a skillet on the stove versus baking them in the oven.
Bacon Gravy Ingredients:
2-4 Tablespoons -Flour
1 -2 Cups – Milk
Salt and Pepper to taste
(I mostly just eye ball this recipe, as I watched my mom make it for years!) Slowly add flour to the pan of bacon drippings over medium heat and whisk continuously. Begin adding milk as need to thin out the gravy so it doesn’t become lumpy. Add flour and milk as needed. Continue whisking. Add salt and pepper to taste. Remove from heat and serve.
