Mini Pancake Muffins With {Sprinkles} Please!

It’s no secret my daughter loves PANCAKES! Every morning usually starts out with her shouting off requests for breakfast.

I want chocolate chip pancakes, waffles, cookies, ice cream, and donuts!

See the theme? She gets her chocolate loving sweet tooth from her Mama! I mean how can you not LOVE chocolate, right!? Well, try explaining to your newly turned 3 year old that you cannot make a trip to her favorite donut shop, that ice cream and cookies are not breakfast items, and you are out of chocolate chips. I can attest to the fact that this is no easy task! Many mornings result in a short melt down, but usually I can get her to perk up with one word – “Step Stool.” All I have to do is pull that bad boy out of the pantry and we are ready to get cooking!

Like a typical toddler, she will fixate on her favorite food items for weeks on end, but if you have read my blog before, then you know I am big on variety. I feel the best way for children to be open to trying new things is to start young. Even a new piece of fruit added into the rotation is key.

That’s when I started to realize we were stuck in a breakfast rut and I was the facilitator. We have been doing a lot of chocolate chip pancakes and waffles. Honestly, I felt good about it. Mostly because I make a healthy batter, which excludes sugar, eggs, and butter. So, adding in a few chocolate chips wasn’t a big deal. While I still feel that way, I also realized I don’t want her viewing chocolate as a “healthy” food group for every meal. Insert my pancake muffins!

I Want Mini Pancake Muffins With {Sprinkles} Please!

Ingredients:

1 Cup Flour

1 Cup Milk

1 TBS Baking Powder

1 tsp Cinnamon

1/2 tsp Salt

1 Cup Oats

2 Ripened, Mashed Bananas

1 tsp Vanilla Extract

Toppings:

Sprinkles

Directions:

Preheat oven to 350 degrees. Mix all ingredients, except sprinkles in a large mixing bowl. Spray mini muffin tin with cooking spray. Fill each muffin tin to the top with batter. Top with Sprinkles and place in the oven for 15-20 minutes. Let cool for 5 minutes.
